Recipe:
Chicken Curry
Ingredients:
Oil
Whole chicken
1 tsp of jeera seeds
1 tsp of garlic and ginger
2 cinnamon sticks
2 bay leaves
Half an onion
1-2 tomatoes
1 tbsp of masala
3 tbsp of rombo rossi
1 teaspoon of tumeric powder
1 teaspoon of salt
Potatoes
Curry leaves
Method:
Heat oil
Add jeera seeds, cinnamon sticks and bay leaves
Braise until seeds pop
Add the onions and cook until brown
Add garlic and ginger
Add tomato
Mix
Braise for 5-10mins
Add turmeric powder
Add Kashmiri Masala and Rombo Rossi Masala
Salt to taste
Add chicken and potatoes
Mix
Cook for 10mins on a medium heat
Add 2 stems of curry leaves
Add boiled water
Put the lid on and cook, stirring occasionally
Let it cook with the lid on until masala is cooked.
Mutton Curry
Ingredients:
Oil
1kg mutton
1 tsp of jeera seeds
1 tsp of garlic and ginger
2 cinnamon sticks
2 bay leaves
Half an onion
2 tomatoes
1 tbsp of masala
3 tbsp of rombo rossi
1 teaspoon of tumeric powder
1 teaspoon of salt
Potatoes
Curry leaves
Method:
Heat oil
Add jeera seeds, cinnamon sticks and bay leaves

Dice/slice the onions and cook until brown
Add garlic and ginger
Add tomato
Mix
Braise for 5-10mins
Add turmeric powder
Add Kashmiri Masala and Rombo Rossi Masala
Salt to taste
Add mutton/lamb
Let the curry braise for 10-15mins and then add the potatoes
Mix
Cook for 10mins on a medium heat
Add 2 stems of curry leaves
Add boiled water
Put the lid on and cook, stirring occasionally
Let it cook with the lid on until masala is cooked.

Sometimes I cook with Rombo Rossi only and other times I mix with the Gorima’s Kashimiri Extra special – the masala’s combine make the tastiest mutton curry. I prefer the Mumbai Spice Rombo Rossi to the Gorimas version- This Rombo Rossi is redder in colour and has a much better taste.
