Gajar Halwa is a slow-cooked traditional confection prepared by simmering carrots in milk. This dessert has the texture of a pudding, rich in flavours introduced by freshly-grated carrots, full-fat milk, sugar (or the healthier, jaggery), clarified butter, cardamom powder and an assortment of nuts. Be careful to use carrots that are fresh, tender and young as they tend to be sweeter and less fibrous. Sauté the grated carrots in clarified butter and subsequently add full-fat milk and stir frequently until the milk reduces and the mixture thickens. Slowly mix-in the desired sweetener and add finely-chopped nuts (such as almonds, pistachios and cashews) and some cardamom powder.
